Middle Eastern Okra Recipe

This is a very fast and tasty summer dish that can be served with any protein and carb. Okra is good for the skin, hair and nails because it contains silicon.

1 lb okra (be sure to pick the ones no bigger than your thumb. The larger ones are very “woody”)
Olive or refined coconut oil
1 onion chopped finely
3 cloves of garlic chopped
10 cherry tomatoes crushed
¼ bunch fresh cilantro de stemmed and chopped coarsely
Water

In a frying pan, saute okra in just enough oil to coat them on a med to high heat for several minutes until the green color is vibrant. Add the rest of the ingredients except cilantro with just enough water to cover the bottom of the frying pan. Cover, bring to a boil and lower to lowest heat and steam them until okra is tender 5 minutes max. Add chopped cilantro, mix and serve. Serves 4
