1 medium Onion chopped coarsely
3 cloves garlic chopped coarsely
3 TBS organic olive oil
1 one-inch piece fresh ginger root peeled and grated finely
1 medium Sweet potato or yam washed and cut in chunks
2 zucchinis cut in chunks
1 large carrot cut in chunks
1 handful of whole green beans with stems removed
15 oz can garbanzo beans or chick peas drained
8 oz tomato puree
4 oz water
In a spice grinder (I use a coffee mill) grind together:
3 whole allspice, 1 black cardamom hulled OR 2 green cardamom hulled if black not available, 2 cloves, ½ tsp whole coriander seeds and a dash to ¼ tsp of cayenne pepper. *
In a covered saucepan, saute onions and garlic in olive oil until translucent. Add veggies except the garbanzo beans. Add tomato puree and half the amount of water that can be increased as needed. Cover and bring to a boil. Simmer until veggies are tender. Add spices and garbanzo beans and simmer 5 minutes. Salt and pepper to taste.
