Silcilian Citrus Salad Recipe

Citrus season is upon southern California and Arizona. We have pink grapefruit, tangerine and orange trees. Everyone eats citrus like crazy.

1 medium beet root cooked and diced

1 any kind of orange peeled and chopped – save peel for later

1 tsp org extra virgin olive oil

½ lemon juiced

Salt and pepper to taste

1 clove garlic minced

orange zest

Put all ingredients in a bowl and stir. Add orange zest, the peel rubbed on a grater, to taste. Can be served room temp or after refrigeration. ENJOY!
